For the Chicken
100g Streaky Bacon
4 Skinless Chicken Breasts
4 Slices of cheddar cheese
For the Sauce
60g Cheddar Cheese, grated
2 Jalapenos, chopped
200g Smooth Cottage Cheese
30ml Mayonnaise
Method: Pre-heat oven to 180°C
In a pan, heat up a little bit of oil, add the bacon, fry until evenly browned and cut each strip into 4 pieces .
In a mixing bowl, combine the grated Cheddar, Jalapeno, Cottage Cheese, Mayonnaise, water and salt and pepper, set aside.
Cut slits into Chicken breasts, season with salt and pepper
Place the Bacon and Cheese alternately into the Chicken slits and place in oven dish.
Pour Cheese Sauce over the Chicken
Bake for 40 minutes or until the Chicken is cooked.
Serve with vegetables and Rice Pasta.
