BACON ONION JAM




Ingredients

400g bacon, chopped

15ml. butter

1 medium onion, finely chopped

125ml packed brown sugar

5ml. mustard seed

5ml Dijon mustard

5ml tsp. salt

250ml coke soft drink/ any of your choice


Method:


1. Cook bacon in a large skillet over medium 5 to 7 minutes or until edges start to brown and curl. Transfer bacon to paper towels using a slotted spoon. Drain off grease from pan.

2. Melt butter in the pan over medium. Add onion; cook 8 to 10 minutes or until golden brown and starting to caramelize, stirring occasionally. Stir in brown sugar and mustard seed.

When the sugar melts, stir in Dijon mustard, salt, and the reserved bacon. Add Coke. Bring to boiling; reduce heat to a gentle boil. Simmer, uncovered, about 15 minutes or until thickened but still drippy.

Refrigerate up to 3 days
