Ingredients
120g butter
200ml sugar
2 eggs, beaten
250ml banana pulp (3-4 bananas)
15 ml lemon juice
500ml flour
2ml salt
2.5ml bicarbonate of soda
10ml baking powder
125ml milk or buttermilk
Method
1. Cream butter and sugar. Add the eggs 1 at a time
2. Add the banana pulp and lemon juice
3. Sift dry ingredients together and stir into the creamed mixture alternatively with the
milk.
4. Turn batter into a lined and greased loaf pan and bake in a moderate oven (180°C)
oven, until the testing pen comes out clean.
