BEEF FILLETS SPICED WITH BEER

Serves 4





Ingredients

 

200 g  onions

50 g    smoked streaky bacon

5        slices of parma ham

250 ml dark beer

500 ml stock

1        slice stale brown bread

600 g  beef fillets

30 ml  oil

8        shallots

2        garlic cloves

          Marjoram

5 ml    ground caraway seeds

5        juniper berries

5 ml    coriander corns

          Salt and pepper

 

 

Method

 

  1. Cut the bacon into small cubes, heat in a frying pan; add the finely chopped onions and fry.

  2. Crush the garlic into the pan and add the stock and beer.

  3. Crumble the bread into the sauce and simmer for 30 minutes. Strain through a sieve.

  4. Cut the fillets in stripes, briskly fry in hot oil, season with salt and pepper.

  5. Pour over the sauce and bring briskly to the boil.

  6. Slice the shallots, cut the ham into strips, toss in hot butter, add to the meat.
