Mash Potato cheese puffs




Ingredients:

2 cups leftover mashed potatoes

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 tablespoons chopped chives (optional)

1 fresh garlic clove

Salt and pepper to taste

2 large eggs, beaten

1/2 cup breadcrumbs

Cooking spray or oil for greasing


Method:

  1. Preheat Oven: Preheat your oven to 200°C. Grease a baking sheet with cooking spray or oil.

2. Mix Ingredients: In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, chives (if using), garlic powder, salt, and pepper and eggs

3. line a muffin tin with a little oil. Dust the tin with bread crumbs.

4. Spoon the mixture into the muffin pans

5. Bake: Place on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and crispy.


Alternatives: add other flavours such as bacon, mushrooms or ham to your mixture to give your puffs a different flavour.
