Welsh Rarebit


Ingredients

-        25ml Margarine

-        25ml cake flour

-        180 ml Cream

-        5ml English mustard

-        2ml Paprika.

-        5ml Worcestershire sauce

-        100ml Beer

-        90g Cheddar cheese.

-        6 slices of bread.

-        Salt and freshly ground black pepper to taste.

Method

  1. Melt the butter in a saucepan, then stir in the flour to form a roux.

  2. Add the cream to the roux and stir gently until sauce thickens. 

  3. Add the English mustard, paprika and Worcestershire sauce to the white sauce.

  4. Stir in the beer, then melt in the Cheddar. 

  5. Season to taste.

  6. Toast the bread slices on both sides under your oven’s broiler, then spoon the cheese sauce over the bread. 

  7. Cook under the preheated broiler until the cheese is bubbling and golden.
